For those who may not know, mexican oregano has a distinct flavor versus the mediterranean oregano we typically find at the supermarket. Mexican oregano is not shy and has a deeper leafy flavor that I enjoy in all my spanish dishes. You can always substitute a mediterranean oregano in a spanish dish, but never use a mexican oregano in a mediterranean dish.
