Bring 2 cups of water or broth and 1/2 tsp salt (optional) to boil in saucepan. Add 1 cup quinoa. Cover and reduce heat to medium. Simmer until water is absorbed, about 12-15 minutes. Remove from heat and fluff. Let stand covered for 15 minutes.
